Boorelu

Also known as Andhra style deep fried sweets.

A traditional sweet that is the favorite of most Telugu people and made on festivals and joyous celebrations is boorelu.

Makes 9 boorelu.


Ingredients:

  • 1 cup channa daal (bengal gram)

  • 1 1/2 cup water

  • 1 cup grated jaggery

  • 1 tbsp ghee

  • 1/4 tsp cardamom powder

  • 1 cup urad daal (split black gram)

  • 2 cups uncooked rice

  • oil for deep frying


Method:

  1. Wash urad daal and rice and soak separately for 4-5 hours.

  2. Blend soaked urad daal and rice along with enough water to make a batter consistency. Keep aside.

  3. Wash channa daal and pressure cook with 1 1/2 cup water.

  4. Drain and mash channa daal until smooth.

  5. In a pan, heat jaggery, ghee, and mashed channa. Cook until mixture is dry on medium heat.

  6. Add cardamom powder and mix well. Let cool completely.

  7. Make lime-sized balls shown in above picture.

  8. Heat oil for deep frying.

  9. Dip each ball in batter and fry until golden brown.

  10. Serve with ghee.
