Tasty Vegetable Biryani

Vegetable biryani is a fragrant and flavorful Indian rice dish, featuring basmati rice, a mix of vegetables, and a simple to complex blend of whole and ground spices. While traditionally prepared in multiple steps, the one-pot method offers a simpler, quicker alternative. By cooking all the ingredients together in a single pot—such as a pressure cooker or Instant Pot—you can create a delicious and satisfying meal that’s perfect for busy weeknights, with all the signature aromas and tastes of classic biryani. This delicious biryani was prepared by my husband, whose expertise in Indian vegetarian cooking always brings something special to the table.


Ingredients:

  • 2 cups soaked and drained Basmathi rice

  • 4 cups cubed and diced mixed vegetables (potatoes, carrots, broccoli, peas)

  • 1 finely chopped onion

  • 1 finely chopped tomato

  • 5 garlic cloves minced

  • 1 tsp ginger paste

  • 1 tsp your choice of store-bought biryani masala

  • salt to taste

  • 1/4 tsp turmeric powder

  • 1/4 cup chopped cilantro

  • 2 tbsps oil


Method:

  1. Saute chopped, onion, ginger-garlic in warm oil till golden brown.

  2. Add chopped tomato and saute till soft.

  3. Add mixed veggies and saute for 8-10 mins on medium heat to combine all ingredients.

  4. Add biryani masala and turmeric and saute for few minutes.

  5. Add rice and saute well to combine all flavors.

  6. Add salt and chopped cilantro, then continue cooking until the biryani is done, following your pot’s instructions.

  7. Serve with yogurt and / or gravy of your choice.
