Janthikalu

Janthikalu or Laavu Kaarapusa are a hit among young and old for its taste. This is one snack that is delicious and addictive. Make with muruku press (as shown in the picture below) as much as you can and store in an air-tight container for a week. Take proper care that the oil fumes do not reach your hands while making janthikalu. I suggest practicing on a plastic sheet to make janthikalu rather than directly in hot oil If you are using muruku press for the first time.

Ingredients:

  • 4 cups besan (bengal gram flour)

  • 1/2 cup rice flour

  • 2 tsp crushed ajwain (carom seeds)

  • 2 tsp red chili powder

  • salt to taste

  • oil for deep fry

Method:

  1. Mix all ingredients, except oil, to form soft dough using water. Knead well and keep covered for 30 minutes.

  2. Grease muruku press with oil. Fix the disc with larger holes and place a big lime size of dough and press into hot oil, like spirals without overlapping. Fry until golden brown.
